THE Derbeian | Winter 2019/20 Matt Allsopp, Head Chef at The Boot, Repton creates a light and refreshing Goat’s Cheese Mousse, served with fresh fig, roasted walnuts and celery leaves. Matt joined The Boot, in Repton, in 2015, as a Chef de Partie, when The Boot re-opened after being totally re-furbished following a period of closure for a couple of years. Menus were styled on fresh, seasonal, locally sourced produce with the emphasis on classic dishes with a contemporary twist. Under the direction of then Head Chef, Rob Taylor, Matt developed his craft and progressed to Jnr Sous, Sous Chef and earlier this year he became Head Chef. Matt’s passion for taste, flavor and presentation is every dish he produces. HOW TO MAKE A GOAT’S CHEESE MOUSSE Ingredients: 600ml Cream 400ml Milk 250g Goat Cheese – with rind on 7 Gelatine Leaves A Fresh Fig Handful of Walnuts To make the mousse boil the milk and cream together. Soak the gelatine leaves in cold water until soft, add the gelatine leaves to the milk and cream and stir until dissolved. Then add the goats cheese and blend until smooth. Pass through a fine sieve and poor in to moulds. Place into the fridge to set for at least a few hours but preferably overnight. To Serve: Finely dice the celery, roast and crumble the walnuts. Thinly slice the fresh fig, plate up and garnish with celery cress.
